Are you going to get in a funk?

That's what Mike asked me the other night, after I looked at the weather forecast for the weekend, and saw that it was going to be perfect for fall running. I got into an particularly long funk two years ago, the last time I had a running injury.  But this time around, I'm not going to let that happen.  I'm going to stay busy in general, which I was all weekend.  I got in a few great bike rides, and on Thursday I did Jillian Michaels Yoga Meltdown....meltdown indeed, I was a sweaty mess after that, and was actually sore the next day!

I did a bunch of cooking this weekend, which I especially like to do in the fall.

So after picking pumpkins:



I made a batch of vegetable soup with a Mexican flair (I'll post the recipe, it turned out reeeeally good).




Baked a bunch of garlicky meatballs.




As well as some caramelized onion, goat cheese and walnut pizza with a beer crust (recipe HERE).




Finished off with an apple crisp, made from the 20 pounds of apples we bought at a farm stand, for $8.00.





So that was my weekend.

Bring on the yoga.

I agree, no funk! I am heading to yoga tomorrow to aid my recovery. My body is quite sore after a half- I can only imagine how it is after a full!

Dude that pizza looks awesome. I shall be making that soon!!!

I love Jillian Michaels...I just got her new cardio max workout...hoping to give that a test whirl after this weekend! Now I need to go eat lunch that I skipped because your post made me hungry!!

YumYum!! I am having trouble too dealing with not running! Hopefully we will both heal soon and be able to enjoy a little bit of the fall running!

Ugh! You have so much food on your site... Why is it that I get more food cravings in the fall? I also had an inkling to bake-last weekend it was chocolate chip cookies (5 dozen, gone in four days), and this past weekend I made an apple pie with fresh apples that I bought(made on Sunday, gone today!!!)

You conquered The Marathon with an injury. That's like a funk-vaccine for at least the next year. Continuing good attitude. Great to hear.
Pumpkins and fall weather, I know I say it alot, I love every season, but there is nothing like being a runner (or cyclist or yogateer) in the Fall. Enjoy it!

OMG!!! I am HUNGRY now!!!

Here is a recipe I like to use with apples, I think its good and its super easy.

CINNAMON BAKED APPLES WITH BLUEBERRY FILLING

~ 1 -4 medium apple(s)

~ 2 tablespoons frozen unsweetened blueberries or strawberry or any berry you want or have(not thawed) per apple

~ Ground cinnamon and cinnamon sticks

~ 2 teaspoons agave nectar or honey per apple

Directions:

1. Preheat oven to 350 degrees
2. Wash and core apple(s) making the holes about 3/4 – 1 inch wide and leave 1/4 inch at the bottom
3. Sprinkle the insides with cinnamon, fill with frozen blueberries and drizzle with agave nectar or honey. Add a cinnamon stick to the center hole
4. Place the apples in a deep baking dish and add just enough water to cover the bottom of the pan
5. Bake 30 minutes until tender but not mushy
6. Baste the apples with the juices occasionally during cooking
